THE issue of taking pride in how we administer our craft, with special reference to food-stall owners, has been bugging me for a while.

The majority of food-stall owners tend to just go through the motion of producing the dish, be it chicken rice or fishball noodles. Nowadays, many even buy finished or nearly finished products from suppliers and mark them up to resell.

Take tau huay (beancurd), for example. When you see that the stall has no beancurd-making machine, chances are that it is getting the stuff from some mass-production facility.

What about wonton noodles? Many stalls get their char siew from a supplier. So all the hawker does is dunk the noodles in hot water and add the respective condiments.

I understand that there is a need to buy certain food components if it is not cost-effective for stalls to prepare their own.

However, to me, it all boils down to how much pride one takes in creating a highly palatablemasterpiece”, which not only tastes yummy but will also entice foodies to traverse the length of the island just to get a piece of it.

This brings me to Mr Alan Koh, who runs a rojak stall in Ghim Moh.

While having lunch with my son at a coffee shop about six months ago, we noticed the newly opened stall and decided to give it a try. It was love at first bite! We ordered another two plates and I asked Mr Koh how he concocts such a tasty treat.

He recounted the steps he takes to create the dish, from the careful selection of fruit and vegetables at the wet market each morning, to the ingredients he uses to formulate what he calls his 6A hae-kor (prawn-paste) sauce.

Every order is made individually and, when it all comes together and that last spoonful of crushed peanut is showered over the dish, it is perfection!

Whenever I order a plate and put that first piece of you-char-kway (deep-fried dough stick) into my mouth, I can feel my taste buds being called to attention instantly. To me, this is the king of rojak – the one that beats it all!

Apple to patent smart flash

APPLE is designing an advanced camera flash system that is said to optimise the lighting on the subject, according to a patent application filed by the tech giant.

The filing was related to flash re-directors and new imaging sensors, LA News Monitor reported, quoting technology blog Patently Apple.

According to the patent, the company could integrate the system into a wide variety of Apple products, including its iMac desktop and MacBook laptops.

The company is also planning to use the system in devices based on its iOS operating system and in Apple cameras as well, said LA News Monitor.

This latest move suggests that Apple wants a bigger piece of the imaging business, after having improved the imaging capabilities of its devices, including the iPhone 4 and the iPod touch, according to CNet.

Patently Apple revealed that the flash re-directors would work by selectively illuminating certain areas of a scene with an array of flash lights that point at different directions.

According to the filing, as reported by Patently Apple, the camera flash system will not provide blanket lighting for the whole photograph. It will, however, allow for a lens that redirects a fixed light source, or multiple flashes, said LA News Monitor.

The light source can either be automatically aimed at the place where it is needed or the photographer can control it.

This means that the camera could detect where the subject is and turn on the nearest flash accordingly for a picture with better illumination, reported CNet.

LA News Monitor said that Apple has improved the photographic capabilities of its hugely successful smartphone – the iPhone range – by releasing the iOS 4.1 software update.

The update added high dynamic range, which takes several versions of the same photograph automatically. It also tweaks the exposure for each one automatically, said LA News Monitor.

The technology will then combine the photographs into a single image with near-perfect colour tone and balance.

Then ......
Formerly known as Pasir Panjang Ridge, Kent Ridge Park was originally a lowland evergreen rainforest filled with crops - such as pineapple, rubber, pepper and gambier - planted by the early settlers of Singapore.

It was used as a fortress by the British in the defense of Singapore and was the site of one of the last battles fought against the Japanese - the Battle for Pasir Panjang, at a hill at the park called Bukit Chandu - during the World War II.

The Governor of Singapore, Sir John Fearns Nicoll, officially opened it in 1954, in commemoration of a visit to the park by the Duchess of Kent and her son, the Duke of Kent, on 3rd October 1952.

It was gazetted by the National Heritage Board as one of 11 World War II sites in Singapore in 1995.




Now ......
31k Bukit Chandu, the remaining black and white colonial bungalow that used to house senior British Army officers has been restored and converted into a World War II museum called Reflections at Bukit Chandu.

Three life-sized statues and a plaque outside the museum were installed to honour those who had fought and died in the defense of Singapore at Bukit Chandu. Two M114 155mm howitzer guns and an AMX-13 Light Tank - decommissioned military artillery donated by the Ministry of Defence - can also be found in the park. It also serves as a reminder of an important chapter in our Singapore's modern history.

A 280metre long canopy walk, located at the eastern part of the park was completed in October 2003, linking Kent Ridge Park to the Reflections at Bukit Chandu.
